Soup

By the time this post comes up I should, Goddess willing, be home from Brazil and also awake. I think I should make this soup, a recipe sent me from Kuwait by one reader, Anfal.

1/4 cup small, rice-like pasta
1 cup cooked red beans
3T corn oil
1/2 cup unions
1T garlic
1 vegetable bouillon cube
1/2 cup chopped carrots
1/2 cup chopped potatoes
1/2 cup shredded spinach
2 cups tomato juice
4 cups tomato paste
6 cups water

Slowly fry the onion, garlic and bouillon cube in the oil. Add carrots and potatoes, stir over low heat for about 15 minutes or until soft. Add tomato paste and stir for 1 minute. Add remaining ingredients, simmer until cooked.
