Pork chops with leeks and oranges
Sauté 2 large leeks in olive oil. Add 2 boneless pork chops and the juice of 2 sour oranges; cover and simmer slowly until done. Serve with a garnish of sour, thickened milk (tykmælk) or kefir.
Meditation on sour milk
Here is a useful page that explains the differences among sour milk products like kefir, yoghurt, quark, and so on. Kefir is the only dairy product with yeast in it. It is creamier than yoghurt and tangier than tykmælk.
Here is one recipe for tykmælk, as a dessert. It calls for one liter of whole milk, one deciliter of buttermilk and one deciliter of whipping cream. Here is a different recipe, using a liter of low fat milk and a deciliter of buttermilk.
Scandinavian sour milk desserts
I made a cold buttermilk soup the other day but apparently you can make these with other sour milk products. I flavor mine with citrus but you can use almonds, it seems, which would make it a wintry dish from northern Europe indeed.
You would stir 50 grams of turbinado sugar into two egg yolks, and add 10 ground almonds. Then you would add a liter of ymer. This would be a richer dessert than the soup I make, but it would still be much healthier than many other things one can eat.
