This course is needed since Mexico has such a distorted and poor image, but apart from that there is so much material. We could look at Mexican and foreign theories. We could examine calaveras and decipher the china poblana. We could read Monsiváis and much more.
This would also be a good course for study abroad. I could teach it in the spring and then in Mexico run a free-standing fieldwork lab for it.
The fact, however, is that new courses (and new programs) are as bad as new conference papers — if they are not about research you have already done, they should not be undertaken.
